Speaking of treats, here is my favorite Black Bottom Cupcake recipe…
Combine the following into a mixing bowl:
*I like to double this portion of the recipe…but that’s just me. :o)
1 cups (8oz) Cream Cheese
1 egg
1/3 cup Sugar
1/8 tsp. Salt
Beat well. Stir in:
1 cup Chocolate Chips
Set aside.
In a large bowl, sift:
3 cups Flour
2 cups Sugar
1/2 cup Cocoa
1 tsp. Soda
1 tsp. Salt
2 cups Water
2/3 cups Oil
2 Tbsp. Vinegar
2 tsp. Vanilla
Beat well. Fill tip with muffin cups. Fill muffin cups at least 1/2 full of chocolate batter. Top each with a heaping tsp. of cream cheese mixture.
Bake for 30-35 minutes at 350 degrees. Use the toothpick method to test if the cupcakes have baked all the way through. Let cool and enjoy!
