Supergrrl Sunday: PSL early and my Chowder Recipe

This week, I was able to open up my Starbucks App on my iPhone and create a “Pass” to get the Pumpkin Spice Latte early – pre release! Woohoo! If you don’t think I jumped out of bed like a bolt of lightning! lol I even splurged on a delicious Pumpkin Scone! Yum! While Summer is definitely my favorite of the Seasons I have to say I’m a junkie for the first part of fall when everything turns Pumpkin Spice…but then again, what girl isn’t? 😉 …Even Ju-Ju the Pumpkin Spice Kitty was excited.
Another thing that happened this week is that the weather turned suddenly too cold for my liking so I made homemade Cheesy Corn Chowder. YUM! My girls and I just can’t seem to get enough of it! I think I’ve shared my recipe in the past but here it is again…
Cheesy Clam Chowder
In a soup pot over Medium heat add…
2 cups Water
3 cans Minced Clams (with juice)
2 Chicken Bouillon Cubes
4 cups peeled & diced Russet Potatoes (I usually use 3 med-large sized)
4 cups peeled & diced Carrots (I usually use about 6 good sized carrots)
3 cups Sweet Onion (I usually use 1 large sweet onion)
2 Tbsp. Parsely
Cook until the Carrots and Potatoes are soft. Then add in…
2 cans Cream of Chicken Soup
4 cups Milk
2 tsp. Seasoning Salt (I use Johnny’s)
1 pound shredded Colby Jack Cheese
1 can Corn, drained
Mix well and turn to low until the Chowder is to your temperature liking. ENJOY!
